Yam Rice (Taro Rice)

After a long and tiring day, the last thing you want to do is to cook complicated meal. Yam rice is a very simple meal to cook with minimal effort, perfect One-pot dish!

Yam also know as Taro is a root vegetable and a robust ingredient which can be made into many yummy dishes such as Hakka Wu Tau Kaw Yoke (Hakka Pork Belly with Yam) - it goes well with any meat.
With Philips Pressure Cooker there is nothing you cannot cook!

Yam Rice (Taro Rice)

200gm Purple Yam (peeled and diced)
3 pcs Shallots (chopped)
3 cloves Garlic (chopped)
200gm Chicken Fillet (sliced)
9 pcs Dried Chinese Mushroom (soaked with warm water; diced)
2 tbsp Dried Shrimp (washed and chopped)
2 pcs Chinese Sausage (sliced)
1 pc Lap Yuk (sliced)
2 cups Whole-grain Rice (washed and soaked)
2 1/2 cups Water
Cooking Oil

Seasoning:
2 tbsp Dark Soy Sauce
3 tbsp Light Soy Sauce
1 tbsp Oyster Sauce
1 tbsp Chinese Cooking Wine
1/2 tsp Chinese Five-Spice Powder
A dash of pepper

Directions:

  • Soak dried Chinese sausages in hot water for 5 minutes - this will help to loosen the casing and so can be easily removed. Sliced thinly. 
     
     
  • Turn on the pressure cooker and set to Bake Mode for Chicken. Add some cooking oil and saute shallot and garlic, dried shrimps.
     
  • Add mushrooms, yam and chicken pieces. Saute for a 3 minutes then add all the seasoning.
     
     
     
  • Add rice grains and mix well until they are coated with the seasoning. 
  • Then add water and close the lid securely (valve to Seal position). 
  • Switch the cooking mode to Rice (KPT 14 minutes). 
  • After 14 minutes, the pressure cooker will slowly release the pressure automatically (Floater will drop when it is fully depressurize).
  • If you cannot wait for it drop automatically, place a damp towel over the valve and wear an oven glove to slowly turn the valve to Vent (Be extra careful when you are doing this!)
  • Serve hot with some chopped spring onions and coriander.
