I've been amazingly busy with Christmas preparation and thank God my workplace is off for Christmas closure until 2016. Finally, I get to have some fun minus work and to attend lots of gathering with family and friends.

That being said, Junior's children church will be hosting a Christmas Pot Bless and so I've decided to bake some cookies for the kids to enjoy!
Danish butter cookies is a traditional and very popular Danish Christmas recipe (and cookie jar favorite too!). These cookies are incredibly easy to make and only require a handful of "common" ingredients.

This is one of the best and delicious Christmas snacks that will surely be enjoyed by the kids.
Danish Butter Cookies

115gm Unsalted Butter (softened)
35gm Icing Sugar
125gm Plan Flour (all-purpose flour)
1/4 tsp Baking Powder

Directions:

  • Preheat the AirFryer to 170°C.
  • Place the butter in a large bowl and beat with a whisk until very soft and pale. Add in the icing sugar and beat until smooth. 
     
      
     
  • Sift in the flour and baking powder and beat together to form a soft and sticky dough.
     
  • Spoon the dough into a pipping bag fitted with a fluted nozzle. Pipe the dough onto the baking sheet (make sure the baking sheet fits the AirFryer basket) according to your liking.
     
     
  • Gently place the baking sheet on the AirFryer basket and cover it with the lid. AirBake for 8 - 10 minutes, or until set and pale golden around the edges.(Tips: The baking sheet will be flying in the AirFryer because the cookies dough are too light)
     
  • Alternatively, you can bake it in the oven at 170-180°C for about 10-12 minutes.
  • Leave to cool completely before storing in an airtight container. 
     
     
     
I have been receiving lots of question on dairy-free and egg-free chocolate cake after sharing the recipe of AirBaked Almost Famous Chocolate Cake.

 So I did a little research...voila!

As you know chocolate cake is a hit with everyone, so whether you're vegan or dairy intolerant - or you just love a good cake.....this one is for you!
I baked this cake for my hubby's birthday and all of us loved this cake to bits....my little boy asked for a second helping too!
Trust me this is an easy cake recipe where you can bake it without having to use any special ingredients. This recipe will comes in handy if you have tons of Christmas parties and wanting to bake a quick & easy cake. Of course this will not be the old traditional fruit cake but hey....who doesn't love chocolate cake!

 AirBaked Dairy-Free Chocolate Cake

94gm All-purpose Flour
100gm Brown Sugar (85gm for less-sweet)
2 tbsp Unsweetened Cocoa Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/2 tsp Vanilla Extract
1/2 tbsp White Vinegar
3 tbsp Vegetable Oil
1/2 cup Water

Directions:

  • Preheat AirFryer at 180°C.
  • Sift flour, sugar, salt, baking soda and cocoa powder into the baking pan (6.3 inches / Philips Airfryer Round Baking Tray). Mix well and make 3 wells on the flour mixture. (Tips: this recipe yields a 6 inches cake so if you wish you to bake a bigger cake, just double up the ingredients) 
     
     
  • Pour oil into the first well, vinegar into second, and vanilla into the third well. Then pour water over all, and stir until well combined. 
     
     
     
  • Reduce the AirFryer temperature to 160°C.
  • Cover the baking pan with foil and poke random holes on it. 
  • Place the baking pan in the basket and let it AirBake for 30-33 minutes. Once done, remove foil and continue to AirBake for another 5-8 minutes, or until the skewer inserted comes out clean.

November was indeed a very busy month for us because it was a month filled with many holidays, parties and travelling.
We drove up north to Betong, Thailand so we can experience some Thai during Diwali holidays,

Now let me share with you one of the latest recipe....Copycat Tony Roma's Chicken Soup. Tony Roma's happen to be one my favorite restaurant because they served awesome food especially "the ribs"..yum! I fell in love with the TR's Chicken Soup and decided to re-create this clear chicken soup at home with the help of my super Philips Pressure Cooker.
Here in Malaysia, we are getting lots of rain and storm lately...so what can be better when you are at home on a rainy day enjoying a bowl of warm chicken soup? Let's not tempt you any further but to share this quick and easy recipe with you!
Copycat Tony Roma's Chicken Soup

500gm Chicken (de-skinned and blanched)
1 large Yellow Onion (peeled and chopped)
1 medium Red Onion (peeled and chopped)
1-2 medium Carrot (peeled and chopped)
2-3 stalks Celery (chopped)
3 cloves Garlic (peeled and chopped)
1 Bay Leaf
1/2 tsp Freshly Ground Black Pepper
3 1/2 cups Water
Salt 
A dash of Ground Cumin (optional)


Directions:
  • Prepare the ingredients and select Bake mode for Chicken on Philips Pressure Cooker . 
     
  • Place chicken, onions and garlic into the pot and let it cook until the chicken is lightly browned (about 3-5 minutes). 
  • Then add the remaining ingredients and stir well.
     
  • Close the lid securely and position the valve to Seal.
  • Reset the Philips Pressure Cooker to Soup mode with KPT (Keeping Pressure Time) of 30 minutes.
     
     
     
     
Salmon is a very versatile fish that you can simply cook it with any way you like and it goes well almost with any sauces. Unfortunately, I'm not a big fan of salmon after giving birth to my darling boy...somehow I just cannot stand the smell of salmon (you will know the smell if you hate salmon too!..LOL).

This does not stop me from cooking salmon for my family because it is one my family's favorite fish dish. So I'm trying all sort of way to marinade the fish so that the "smell" will be masked by the sauces...Haha!
So here's the recipe for Air-Grilled Honey-Glazed Salmon. This is a no-fuss, no-mess, easy way marinade salmon fillets. And you will get a wonderfully flavored salmon fillets.
Air-Grilled Honey-Glazed Salmon

2 pcs Salmon Fillets (about 100gm each)
6 tbsp Honey
6 tsp Soy Sauce
3 tsp Hon Mirin (alternatively you can use Rice Wine Vinegar)
1 tsp Water

Directions:
  • Mix honey, soy sauce, Hon Mirin (sweet rice wine) and water together. 
  • Pour half (or some) of the mixture in a separate bowl, set aside as this will be used as sauce serve with salmon.
  • Put together the salmon and the marinade mixture, let it marinate for at least 2 hours. 
  • Pre-heat the Airfryer at 180°C.
  • Air-grilled the salmon for 8 minutes, flip over halfway and continue with additional 5 minutes. Baste the salmon with the marinade mixture every 3 minutes. 
     
  • To prepare the sauce, pour the remaining sauce in a pan and let it simmer for 1 minutes. Serve with salmon.
