Coriander, Lime and Yogurt AirGrilled Chicken Wings

Being a working mom with a toddler and a husband to care for and a house to maintain to its sanity state, I will need everything and anything that would makes my life much easier! As far as food and tummies are concerned, I have pretty much conquered this section with the help of my amazing gadgets in the kitchen.

These may look like ordinary chicken wings until you give them a bite! I received many good comments from this dish - 21 months old darling said it taste really yummy too! 

What makes this chicken wings so flavorful and tender? 
Brine juice and Greek yogurt does the tricks! It tenderizes the chicken wings so beautifully and they are well infused with sweet, spicy and warm herbaceous aroma of fresh coriander with a subtle hint of zingy lime that awaken your taste buds. 

What exactly is brining and what are its advantages?
Brining is process where you marinate the meat by soaking in a solution of water and salt, and it can be flavored with sugar, juices or seasonings. Soaking meats in brine juice will helps to ensure moist, juicy cooked meat. 

The scientific explanation: the salt-water solution increases the juiciness of the meat by loosening the protein structure and this in return allows extra water and flavors to be trapped by the protein. The moisture and flavor are retained during the cooking process, making the meat juicy and tender. 
Coriander, Lime and Yogurt AirGrilled Chicken Wings

6 Chicken Wings
1/4 tsp Ground Black Pepper
1/4 tsp Ground Coriander
1/2 cup Greek Yogurt
3 medium Limes (juiced)
80 ml Brine Juice
1/2 bunch Coriander (chopped)

Brine Juice:
1/2 cup Warm Water
1/2 tbsp Pink Salt
1/2 tbsp Sugar

Directions:
  • To make brine juice: Whisking together warm water, salt and sugar until the salt and sugar completely dissolved. Put this aside to cool before using. 
  • Add the yogurt, lime juice and coriander into the cooled brine juice. Whisk to combine. 
     
  • Place the chicken wings in a mixing bowl and toss together with ground black pepper and ground coriander. 
     
  • Pour the brine mixture onto the chicken wings. Toss together until all the chicken wings are fully coated and submerged in the marinade. 
  • Cover the bowl with a cling film, refrigerate and allow the mixture to sit for at least 4 hours (preferably overnight).
  • Preheat the Airfryer at 180°C for 5 minutes.
  • Place the chicken wings on the grill pan (4-5 pieces each round) and AirGrill for 13-15 minutes.
     
    (Tips: Try not AirGrill together with the bits of coriander leaves as it will get burned and leave unpleasant residue on the chicken wings)
  • At the end of the time, flip the chicken wings and continue to AirGrill for another 4 - 6 minutes. 
  • Transfer to a serving plate and top with some chopped coriander, sprinkle of smoked paprika and lime wedges.
